I made this amazing veggie pizza a few weeks ago. It wasn't as good as our grilled version from last Fall, but it was too cold to fire up the grill on this day.
I roasted cut onions, red bell peppers, garlic, mushrooms, zucchini and squash in the oven for about 10-15 minutes. I removed the roasted vegetables from the oven and mixed in seitan(wheat protein), kalamata olives, fresh basil and fresh organic spinach.
We purchased a whole wheat pizza crust from the store and smeared a thin layer of store bought pasta sauce on the crust. We then piled on the vegetables and then put the pizza in the oven for 10-15 minutes, watching closely to make sure that the vegetables were not getting burned.
As expected, the pizza tasted awesome and was a hit with the kids. And yes, it tasted great without any cheese on it.
The only problem was that there was no leftovers with this dish.
