I sauteed onions, mushrooms, peppers, squash, zucchini, asparagus and black beans and some salt & pepper.
I cooked this brown rice couscous according to the package directions.
Once it was done I added it to the vegetables.
It was good, but maybe needed some kind of sauce. It was a tad dry.
Our 3 year old loving his salad!
I mixed kale and romaine leaves with carrots, tomatoes, black olives and Italian dressing.
All my kids preferred their salad over the Brown Rice Couscous dish.
